Instructions

Step 1
For Meatballs: Add equal parts paprika, coriander, garlic powder, and onion powder. Then add half as much fennel and cayenne, salt and pepper to taste

For Meatballs: Grab bowl and add spices, beef and egg together. Make small meatballs.
Step 3
For Meatballs: Fry some meatballs in a pan to get the flavor in, then I'd recommend oven roasting the rest at 425 on a rack. They get way too greasy otherwise.

Chop onions, peel potato (can chop potato while meat cooks)
Step 5
In a large pot, fry garlic, onion, and any peppers.
Step 6
Add in butter and flour, to make a roux. Start with slowly melting butter, then gradually as flour so it won't clump.
Step 7
Add ONLY 16 ounces of chicken stock once onions are done, and bring to a light boil.
Step 8
Add potato bites, bay leaves, rosemary, thyme, and salt and pepper to taste. Get soup broth to correct taste.
Step 9
Add meatballs and half and half, simmer and reduce till it's a bit thicker
Step 10
Clean spinach, and lay in bottom of bowls. Serve stew, and have bread to dip!
