Pork Crackling, but done low and slow to get a better texture

Instructions
Step 1
Separate the pork fat from any meat. You can use the meat to make pulled pork
Step 2
Score the skin side of the fat.
Step 3
Generously season both sides of the pork fat
Step 4
Heat a pan to medium heat with the oil and lay the pork skin side down
Step 5
Use something to weigh it down to ensure surface contact all over
Step 6
Fry for 15-20 minutes until it is brown all over and bubbles have formed

Step 7
Preheat the oven to 140C

Step 8
Lay skin side up on a wire rack above an oven tray.

Step 9
Cook the fat for 3-4 hours, until the underside is all crisp and there is no “gummy fat” left

Step 10
Cut it up into bite size pieces and enjoy with a beer
