200gboneless skinless chicken
sliced

30mlwater

1 teaspoondark brown sugar

2garlic cloves
minced

½ tablespooncurry powder

½ teaspoonchili powder

¼ teaspoonground ginger

salt
to taste

black pepper
to taste

0.5red onion
thinly sliced

1sweet mini pepper
sliced
Sauce

20mlwater
boiling

1 tablespoonpeanut butter

½ tablespoonsoy sauce

1 teaspoonwhite vinegar

½ tablespoondark brown sugar

1 teaspooncayenne

1 teaspoonchili powder

1clove garlic

Prep Chicken
Step 1
In a large bowl, whisk together the water, sugar, garlic, curry powder, paprika, chili powder, ground ginger, salt, and black pepper. Add the chicken, onions, and sweet peppers and turn them until they are coated evenly with the marinade. Cover the bowl and marinate in the refrigerator until your patience runs dry.
Prep Sauce
Step 2
In a small bowl, whisk the boiling water and peanut butter together until the peanut butter is dissolved into the water. Whisk in the soy sauce, white vinegar, sugar, cayenne, chili powder, and garlic. Set aside.
Cooking Time

Get your rice cooking, preferably in a rice cooker.
Step 4
In a pan or skillet on medium-high heat, pour in your oil and put in your chicken, onion, and sweet peppers and cook everything until it's cooked.
Step 5
When everything's close to being done, pour in your sauce and let everything incorporate together.
Step 6
Serve on top of your rice, and enjoy!
