Instructions

Teriyaki chicken

Step 1
Slice the chicken.
Step 2
Add all the ingredients accept for the sunflower oil to a bowl and mix well. Let marinate for minimum 30min.
Step 3
Heat the sunflower oil in the pan. Leave the heat on medium high. Add the chicken and fry for about 3-5min until cooked through.

Fried vegetables

Step 4
Thinly slice the carrot and bell pepper.
Step 5
Heat the oil in the pan. Leave the heat on medium high. Add the vegetables and fry for about 3min.
Step 6
Add the soy sauce and fry for another minute.

Pak choi

Step 7
Mince the garlic.
Step 8
Heat the oil in the pan. Leave the heat on medium. Add the garlic and fry for about 30s.
Step 9
Place the pak choi with the cut side facing downwards into the pan and fry for another 2-3min.
Step 10
Flip the pak choi and drizzle on the honey. Then pure over the soy sauce. Fry for another 1-2min.

Fried eggs

Step 11
Slice the spring onion.
Step 12
Crack the eggs into a bowl and season with salt. Then whisk.
Step 13
Heat the oil in the pan. Leave the heat on medium. Add the spring onion and fry for about 1-2min.

Then add the eggs and fry for another minute. The eggs should still be a little bit soft.

Sandwich

Step 15
Place the bread slices in the same pan in which you fried the chicken and toast on both sides until golden brown.
Step 16
Spread the bottom slice with the hoisin sauce.

Then top it with the fried vegetables, fried eggs, pak choi and chicken.
Step 18
Drizzle on the sriracha mayo.
Step 19
Stack the other bread half on top and enjoy!
