Instructions
Step 1
Cook the pasta in salted boiling water until al dente. Drain and set aside. Keep some of the cooking water.
Step 2
Cook the chopped garlic and sun-dried tomatoes in the butter and olive oil over medium-high heat until fragrant.
Step 3
Add the scampi, cream, salt and pepper and cook for about 5 minutes. If you're using frozen scampi, thaw them using hot water or in the microwave. Just in case you feel the sauce is not binding well, add a splash of pasta cooking water and stir it in. The starch from the water will help to give your sauce more body and a silky texture.
Step 4
Add the baby spinach and stir until wilted. Remove the pan from the heat and add the parmesan. Stir to incorporate it.
Step 5
It's ready ! You can top with more parmesan if you want. Bon appétit !
