There is only one way to eat spinach and I promise you it’s this ! Mixed with herbs feta and delicious flakey phyllo pastry it just doesn’t get much better than this

Step 1
If using fresh spinach wash then pat dry . Now roughly chop and fry in a pan with a little olive oil. Cook until the water has released and evaporated . If using frozen spinach defrost strain then squeeze through a cloth

Step 2
Slice 6 scallions then fry the white parts for 2 minutes in the pan with the spinach . Put the spinach and scallions in a large bowl with the green scallion tops two beaten eggs crushed garlic lemon zest feta chopped dill parsley black pepper and nutmeg . I add the smallest pinch of salt to this as the feta is already salty . Mix this all together and this is the filling .

Step 3
Brush your baking pan with oil then layer 5 sheets of phyllo one at a time brushing each one with oil. Drape the excess pastry over the sides of the dish . Now spread the filling on top then layer then next five sheets the same way. Fold in the corners or you can trim if you like but I love to eat all the pastry . I recommend to slice the pie into sections before baking as the pastry gets very flaky and will break apart if you cut it after . Bake at 190 c 375 f for 45 minutes or until golden and crisp and enjoy
