Step 1
Mix eggs in one bowl. Pour breadcrumbs in another.
Step 2
Heat oil in large skillet.
Step 3
Line a plate with paper towels to catch the extra oil later.
Step 4
Take chicken tenderloins and dip them in eggs then in breadcrumbs. Place them on a plate until all are breaded.
Step 5
Once oil is hot, place chicken in skillet. Do not overcrowd the pan. Heat on medium-high heat until outside is golden then reduce heat to low and cover skillet with lid for 15 - 20min, or until internal temperature reaches 165.
Step 6
Place finished chicken on paper towel lined plate. Use remaining oil for next batch.
