-Set your oven to 400* F and line a cookie tray with foil or parchment. -In a large bowl, snap the cauliflower head into even, bite sized florets, then drizzle over the 2 tablespoons of oil. Toss to coat well and sprinkle with a bit of salt then bake at 400* for 12-15 minutes, or just until you start to develop a bit of color but the florets are still a bit crunchy. Allow them to cool fully.
-In another large bowl, make the dressing by whisking together the yogurt, sour cream, mayo, lemon juice, honey, chives, garlic powder and buffalo sauce. Whisk to incorporate everything well, then toss in the chopped celery, shredded carrot, and cooled cauliflower. Check the seasonings and add salt and pepper as desired.
-When ready to serve, scoop the salad into your desired serving dish, sprinkle the top with the blue cheese and celery leaves and serve!
