Step 1
Mix the coconut, half the garlic & ginger, the coriander, and the turmeric together. Place it in a large skillet with the bay leaves without any oil over low heat. Cook until coconut is dry and crispy, slowly adding the sugar while it cooks. Remove from heat and set aside.
