Ingredients

3shallots
neutral oil
for frying
flakey salt
1 tspmustard
1 Tbspwhole grain mustard
2egg yolks
2 tsplemon juice
1 tspwhite wine vinegar
200mlneutral oil
2 Tbspwater
cold
salt
to taste
pepper
to taste
1 Tbspblack garlic paste
1sirloin steak
salt
1 Tbspoil
6miso butter balls
3cloves of garlic
3 sprigsthyme
2 slicestomato
rocket
1ciabatta
toasted, half
Instructions
Step 1
1. Thinly slice your shallots, place into a heavy bottom pan, cover with oil. Start the shallots on a low heat and gradually increase the heat to medium whilst constantly stirring. After 10-15 mins once golden strain and season with flakey salt. (Pull the shallots just before they’re golden)

2. For the mayo combine your mustard, egg yolks, lemon juice and white wine vinegar. Mix and slow drip in half your oil whilst constantly whisking. Then gradually stream in the remaining oil.
Step 3
3. Season with salt, pepper and add your cold water along with your black garlic paste. Mix and refrigerate until ready for use.
Step 4
4. Make sure your steak has been out of the fridge for 30 mins before cooking. Season generously with salt on all sides, then place into a ripping hot pan fat cap side first. Sear both sides and cook to your preference. In the last minute of cooking baste with miso butter, thyme and garlic
Step 5
5. Allow to rest for 5 minutes before slicing, then assemble your sandwich
