Instructions
Step 1
Place tortilla chips in food processor and crush to a bread cumb / corn flake consistency.
Step 2
Add spices and run 20 seconds then transfer to a shallow bowl.
Step 3
Blend eggs and milk in another shallow bowl.
Step 4
Put flour in another bowl
Step 5
Coat fish with flour (shake off excess), dredge in egg mixture, then press into tortilla chip mix. Press firmly to make sure it is fully coated.
Step 6
Place coated fish in the fridge to rest for at least 30 minutes. Longer if desired.
Step 7
Preheat oven to 400 F
Step 8
Cover the bottom of an oven safe skillet with vegetable oil
Step 9
Heat skillet over medium high heat until you see the oil shimmering in the skillet.
Step 10
Place coated fish in the skillet and cook until the outer edges of the fish look cooked.
Step 11
Flip fish (it should have a nice golden brown color) and place skillet in preheated oven for 6 mins.
