Mom's Chicken Fajita Roll-Up

Instructions

Step 1
Preheat oven to 350. Put a sheet of aluminum foil on a baking sheet

Put chicken on baking sheet, skin side up

Pour vegetable oil on chicken, rub in

Kosher salt or thick sea salt , coarse ground black pepper, COVER IT in this

Cover it in aluminum foil

Bake for 45-50 min, until the internal temperature is 165.
Step 7
10 min before finished cooking, remove aluminum foil
Step 8
Let it cool
Step 9
Pull off the skin
Step 10
Find where the bone meets the chicken, pull out the bone

Cut the chicken

One packet of fajita mix seasoning (in area with Mexican food), stir in with the chicken chunks

Spread a spoonful of ranch dressing on 8-inch Tortillas
Step 14
Spread sour cream on tortillas
Step 15
Add chicken and cheese, roll it up
Step 16
Put a little oil in frying pan and just cook it to melt the cheese and cook the Tortilla
