Step 1
Heat the oil over medium high heat in a large soup pot. At the least celery and sauté for about six minutes. Add the garlic and sauté for one more minute.
Step 2
Add the stock, 2 cups of water, Bayleaf, salt, and pepper, then bring to a boil.
Step 3
Add the cauliflower florettes and turn the heat to medium. Simmer for 30 minutes until the cauliflower is for tender. Purée the cauliflower and return back to the pot.
Step 4
Stir in vinegar and 1 cup of water.
Step 5
Garnish with green onions.
