Ingredients

1 tablespoonolive oil

4carrots
medium, sliced

1onions
large, chopped and peeled

4celery ribs
chopped

1green pepper
large, seeded and chopped

1garlic clove
minced

2 cupscabbage
chopped

2 cupsfrozen cut green beans

2 cupsfrozen peas

1 x 15 ouncescan garbanzo beans
or chickpeas, rinsed and drained

1bay leaf

1 ½ teaspoonsdried parsley flakes

1 teaspoonsalt

1 teaspoondried marjoram

1 teaspoondried thyme

½ teaspoondried basil

¼ teaspoonpepper

4 cupswater

1 x 28 ouncescan diced tomatoes
undrained

2 cupslow-sodium v8 juice

Instructions
Step 1
In a stockpot, heat oil over medium-high heat; saute carrots, onions, celery and green pepper until crisp-tender. Add garlic; cook and stir 1 minute. Stir in remaining ingredients; bring to a boil.


Step 2
Reduce heat; simmer, covered, until vegetables are tender, 1 to 1-1/2 hours. Remove bay leaf.
