Ingredients

5 Tbspcooking oil
divided
1 cupred bell pepper
diced
1 cupgreen bell pepper
diced
1 cupyellow bell pepper
diced
1 cuponion
diced
3 tspkosher salt
divided
1 tspblack pepper
4 ozcream cheese
½ cupshredded cheddar cheese
½ cupshredded pepper jack cheese
3boneless skinless chicken breasts
2 tspchili powder
2 tspcumin
2 tspgarlic powder
Instructions
Step 1
Heat 2 tbsps. of OIL in a pan over high heat. Season the PEPPERS and ONIONS with 1 tsp SALT, and the BLACK PEPPER and cook until soft and slightly caramelized.
Step 2
Transfer the cooked VEGETABLES to a bowl. In the same bowl, mix in the CREAM CHEESE, CHEDDAR CHEESE, and PEPPER JACK CHEESE and set aside.
Step 3
Slice a pocket in the CHICKEN horizontally.
Step 4
Season the CHICKEN with the remaining SALT, CHILI POWDER, CUMIN, and GARLIC POWDER
Step 5
Fill each pocket with a heaping spoonful of the VEGETABLE MIXTURE.
Step 6
Heat the remaining OIL in a pan over medium heat. Cook the STUFFED CHICKEN for five minutes on each side, until CHEESE is melted, and CHICKEN is cooked through.
