Ingredients
4 servings

12 ozsirloin tip steak

2 cupquinoa
cooked

4 cupsmixed greens

8 ozyellow pepper
thinly sliced, roasted

4 ozred onion
thinly sliced, roasted
Maple Dijon Vinagrette
Instructions
Step 1
Cook quinoa according to directions on package.
Step 2
Heat oven to 400 degrees. Place peppers and onions on a baking sheet. Spray tops with cooking spray and sprinkle with sea salt. Roast 10-15 minutes.
Step 3
Slice steak thin. Place in a grease skillet or pan and cook to desired doneness.
Step 4
Place all dressing ingredients in a blender. Blend until smooth. Weigh dressing and divide the weight by 4 to get the amount needed to fill one serving.
Step 5
Layer 1 cup mixed greens, ½ cup quinoa, 3 oz. steak, 2 oz. roasted bell peppers and 1 oz. roasted onion. Drizzle dressing over the top along with sea salt and pepper to taste.
