Step 1
Preheat oven to 425
Step 2
Rub the chicken thighs in oil and place on a cookie sheet covered in foil.
Step 3
Pull back the skin, and sprinkle the curry spice mix under the skin. Put the skin back in place and generously sprinkle the curry mix above and below the chicken thighs.
Step 4
Bake 30 to 40 minutes, or until thermometer reads 160° F
