Crispy Rice
Once you try my crispy rice recipe, you will always make it with your leftover rice. I’ve done this a few times and I think short-grain rice is slightly more glutinous and makes the perfect crispy rice. It stays soft and almost chewy on the inside, but still very crispy on the outside. If you use just regular rice I recommend still giving it flavor with a little rice vinegar, sugar, and salt.

Instructions
Step 1
Pack tight leftover rice and freeze it for about 45 min.
Step 2
Dust both sides of frozen rice with some flour. You can also use cornstarch.
Step 3
Next, cut it into equal sections and fry it on a little bit of avocado oil on all sides until crispy.
Step 4
Cool for about ten minutes and add any topping you like.
Step 5
I went with sushi-grade salmon, avocado, and a little bit of wasabi.
