Basil scrambled eggs

Instructions

Step 1
In a small bowl, lightly whisk eggs and season with pepper.
Step 2
Heat olive oil in a non-stick frying pan over medium heat. Add cherry tomatoes to the pan and cook for 2 minutes.
Step 3
Pour in eggs and continue to stir until egg is nearly cooked through and light and fluffy. Stir through rocket and basil and remove from the heat.
Step 4
Toast a slice of bread and serve egg scramble on top.
Step 5
TIP: For a quicker option, whisk eggs in a microwave-safe bowl. Place in the microwave for 1 minute on high. Remove and stir. Place back in the microwave for a further 45 seconds on high. Remove and stir again.
