Taco Stuffed Potatoes - healthy life

Instructions

Step 1
Preheat oven to 400°
Step 2
Rinse the outside of the potatoes with water
Step 3
Spray the baking pan(s) with non-stick spray.
Step 4
Poke the potatoes with a fork or knife.
Step 5
The holes allow the steam inside the potatoes to escape while cooking.
Step 6
Cover the baking pan(s) with foil and bake for about an hour.
Step 7
When fully cooked. the potatoes will have a soft and fluffy interior.
Step 8
If Microwaving – Using a microwave-safe dish, microwave for 8-10 minutes on high, turning the potatoes over once halfway through. If potatoes aren’t soft enough, continue cooking for 1-3 minutes.
Step 9
While the potatoes are baking, brown the meat and cook in the taco seasoning (according to the directions on the taco seasoning packet).
Step 10
Once the potatoes are done baking, cut them open lengthwise.
Step 11
Using a fork, fluff up the potatoes as seen in the photos above.
Step 12
Sprinkle a generous amount of shredded cheese on top.
Step 13
Return the potatoes to the oven (uncovered) and broil them for 2-3 minutes or until the cheese melts and begins to golden.
Step 14
If you don’t want to broil them, you can return them to the oven at 400 degrees and let them cook longer until the cheese melts.
Step 15
Stuff the potatoes with seasoned taco meat and all of your favorite taco toppings! Serve and enjoy!
