Instructions
Step 1
Prepare 1 cup polenta according to package instructions. Season with salt.
Step 2
Sweat garlic and shallot in pan lined with olive oil on medium heat. Once the shallot begins to brown, remove from pan using a slotted spoon.
Step 3
Remove mushroom stems and clean well. Add to the same pan/oil you browned the shallots in and turn heat to high (adding more oil if necessary). Brown mushrooms until deeply golden in color - best way to do this is to leave them untouched for a moment before stirring.
Step 4
Once mushrooms begin to brown, add fresh thyme leaves and butter. Mix well to incorporate. Then mix in shallots and garlic.
Step 5
Portion polenta into bowls, then top with mushroom-shallot mixture.
Step 6
Top with fresh dill, black pepper, sour cream and fresh lemon zest.
