Instructions
Step 1
In a deep skillet, heat 1 inch water over high heat until boiling.
Step 2
Add the asparagus and cook until crisp-tender; drain.
Step 3
In a shallow dish, beat the egg and milk until well combined.
Step 4
Place bread crumbs in another shallow dish.
Step 5
In a skillet, heat olive oil over medium-high heat until hot. Dip asparagus into egg mixture then in bread crumbs, coating completely.
Step 6
Sauté asparagus in hot oil until golden.
Step 7
Drain on a paper towel-lined plate and serve immediately.
Step 8
Note: Sprinkle with grated Parmesan cheese just before serving, if you’d like.
