Ingredients

1slice bread
Ezekiel or Harper's Bran

12 ozground turkey
raw lean

½ cupyellow onions
minced

4 Tbspchives

1 tspgarlic powder

salt

pepper

½ cupbbq sauce

12 ozbaby red potatoes

4 cupscauliflower florets
6 TbspGreek yogurt fat
non- plain
½ cupmozzarella cheese low-fat shredded

1 Tbspbutter
Instructions
Step 1
Place the bread in a toaster and toast until lightly browned. Break into pieces and place in a blender. Pulse until bread is broken up into crumbs.
Step 2
Mix thawed ground turkey, breadcrumbs, onions, chives, garlic powder, salt and pepper in a bowl.
Step 3
Heat a skillet to medium heat. Scoop the turkey mixture into balls. Spray skillet with cooking spray and add the meatballs. Flip every few minutes until all the sides are browned and the meatballs are fully cooked through. Add the BBQ sauce to the skillet and stir until the meatballs are coated. Turn heat off; cover to keep warm.
Step 4
Bring a pot of water to a boil. Add potatoes. Boil for 10 minutes. Add cauliflower to the pot with the potatoes and boil for another 10 minutes. Drain and remove from heat.
Step 5
Add the Greek yogurt, cheese, butter, salt, pepper and a dash of garlic powder to the potatoes and cauliflower. Beat with a hand mixer until smooth and creamy.
Step 6
Weigh the meatballs and the mashed potatoes separately, then divide the number of servings. Serve meatballs over mashed potatoes.
