Ingredients

300gjasmine rice
600gfirm tofu
cut into 3cm cubes
8bamboo skewers
2 Tbspvegetable oil
for frying
3cucumbers
diced
2limes
cut into wedges

Satay Sauce
Instructions
Step 1
Set your rice on to cook, in whatever way you prefer. Soak bamboo skewers in cold water for at least 30 minutes.
Step 2
Combine the marinade ingredients in a tub. Press the tofu for 10 minutes with something heavy, like a large pot, soaking up the excess liquid with paper towel. Then cut the tofu into the cubes and toss in the marinade.
Step 3
Make the satay sauce by heating the oil in a pan before adding the curry paste, frying for a minute until fragrant. Then you can add the remaining ingredients, and only cook for a minute or two to combine and bring the flavour together, otherwise it will burn. Take off the heat and set aside.
Step 4
Pierce the tofu with your skewers, putting about 4 tofu cubes on each one. Then, heat a barbecue or a grill and brush with a little oil. Once hot, grill the skewers for a couple of minutes each side, until they have a nice colour and char.
Step 5
Serve on the rice, with cucumber beside, and the sauce over the side so everyone can individually drizzle it as they like.
