HEALTHY CHICKEN KORMA
I really LOVE a korma, but they can be quite calorific with all that cream. This one comes in at just 290 calories a serving. Reduced-fat coconut milk is perfect for creating a leaner curry, giving that creamy sensation without the calories. You don’t get a strong taste of coconut as the spices really shine through.

Ingredients
4 servings
3chicken breasts
cut into chunks
400mltin of reduced-fat coconut milk
100mlchicken stock
1 Tbsptomato purée
1 Tbspmango chutney
4garlic cloves
chopped
2.5 c mfresh ginger
grated
1onion
sliced
1 tspground coriander
1 tspground cumin
1 tspmild chilli powder
1 tspground turmeric
1 tsppaprika
3cloves
1 Tbspcornflour
mixed to a paste with 1 tbsp water
salt
to taste
pepper
to taste
flaked almonds
fresh coriander
to garnish
Instructions
Step 1
Place all the ingredients in the slow cooker, stir and season to taste. Cook on high for 3 hours or low for 4–5 hours. Pick out the cloves and discard them, then garnish with flaked almonds and fresh coriander.
