Instructions
Step 1
In a soup pot, on medium heat, sauté veggies in olive oil for 5-10 min.
Step 2
Add in beans, spices, and veggie broth.
Step 3
Simmer for 25 min.
Step 4
Add in fresh spinach at the end, stir until wilted.
Step 5
Add in cooked rice or pasta. Don’t cook the rice in the soup because it will soak up the broth and get starchy.
