Instructions
Step 1
Preheat oven to 375 degrees in convection oven (400 degrees otherwise).

Step 2
Trim the chicken to remove any fatty parts, cut in half if large, and split horizontally in half and/or pound to even thickness.
Step 3
Place in 12-inch skillet, drizzle with olive oil, lime (or lemon) juice, and sprinkle generously with Penzey's Northwood's Fire seasoning. Flip over and repeat.
Step 4
Add sliced mushrooms and/or chunks of bell peppers and/or grape/cherry tomatoes (or other possible vegetables of choice). Repeat with a bit of olive oil, lime juice, and seasoning.
Step 5
Bake for ~25-30 minutes until chicken is cooked through. Start cooking rice at essentially the same time using a rice cooker or pot on stove as desired.
Step 6
Serve the chicken and veggies on the rice. Garnish with basil, cilantro, and added lime slices.
