Instructions

Step 1
While preparing the sauce, bring a large pan of water (approx 5 litres) to the boil
Step 2
Using a large pan on medium heat add approx 3 tbsp of extra virgin olive oil
Step 3
Add in the crushed garlic and the chopped chillies, let cook for a couple of minutes
Step 4
Add the peeled tomatoes to a large bowl and crush lightly with a masher for a thick purΓ©e. Add salt and pepper to taste and mix well
Step 5
Add the tomatoes to the pan and cook on medium for around 10-15 minutes, stirring occasionally
Step 6
Add a small handful (approx 1-1.5 tsp rock salt) to the boiling water and then add the pasta. Cook until Al dente.
Step 7
A few minutes before the sauce is ready add in the chopped parsley and basil
Step 8
Once the pasta is Al dente add to the sauce with a little pasta water and coat the pasta well with the sauce
Step 9
Sprinkle the grated pecorino cheese over the pasta and mix through
