Our absolute favourite pasta recipe. You can also add some chopped chorizo at the same time as you cook the onions if you want to add a little twist.

Instructions
Step 1
Finely chop half an onion.
Step 2
Add 1 tbsp of oil to a large frying pan on medium heat
Step 3
Add the chopped onion and cook slowly stirring frequently until soft and opaque
Step 4
Boil 300ml of water in the kettle.
Step 5
Fill a large saucepan with water, add 1 tsp salt and bring it to the boil
Step 6
When the onion is nice and soft add the harissa paste and cook for one minute
Step 7
Meanwhile add the pasta to the boiling water, return the water to the boil and cook as per packet instructions
Step 8
Add the stock to the pan with the onions and harissa paste and turn up the heat. Bring to the boil and boil for three minutes or until reduced by half
Step 9
Add the cream and cook until it starts bubbling
Step 10
When the cream starts bubbling, Turn down the heat to medium, add the tomatoes and cook until soft
Step 11
Add a splash of water from the pasta water if the sauce thickens too much
Step 12
When the tomatoes start to soften, add the prawns
Step 13
Turn the prawns after 1.5 mins and cook until both sides turn pink
Step 14
Drain and stir the cooked pasta and spinach into the sauce and serve 😋
