Turkey Panini with Avocado, Spinach and Roasted Peppers

Instructions

Step 1
Preheat a panini press.
Step 2
Spread 2 T of the avocado on the top half of each piece of ciabatta bread. Season the avocado with a pinch of salt and pepper. Place 1/2 cup spinach on the bottom of each sandwich and top each with 2 oz turkey and 2 slices roasted pepper. Close the sandwiches and lightly spray with a little olive oil.
Step 3
Place the sandwiches one at a time on the hot panini press and close. Cook until the bread is roasted and crisp, about 5 minutes. Cut the sandwiches in half and serve immediately.
