6 slicessourdough bread
4 Tbspolive oil
divided
⅓ tspMediterranean spice mix
1 Tbspbutter
1garlic clove
150gpeeled raw prawns
2 Tbsppesto
salt
to taste
pepper
to taste
1avocado
0.5lime
juice only
1 Tbspplain yoghurt
6cherry tomatoes
⅓ tsporegano
⅓ tspgarlic powder

Instructions
Step 1
Preheat the oven to 200C (fan )
Step 2
Cut the bread into 1cm slices, then transfer them to the baking tray, lined with parchment, drizzle with 2tbsp olive oil, sprinkle with Mediterranean spice mix and place in the oven for 10 minutes or until golden and crispy.
Step 3
In a frying pan heat 1tbsp olive oil with better, add prawns, and garlic, season with salt and pepper, and cook until ready ( about 4 minutes ) stirring occasionally. Then add pesto, give it a good mix, remove from heat and set aside.
Step 4
In a bowl, mash avocado and combine with lime juice, yoghurt, tomatoes, salt, pepper, oregano, garlic granules and the remaining olive oil. Mix well until combined.
Step 5
To assemble the toast, spread on each slice 1tbsp of the avocado mixture, then add 3pieces of prawns with pesto sauce, sprinkle with Parmesan cheese, and pine nuts and garnish with basil leaves.
