Instructions
Step 1
Heat olive oil over high heat and add the mustard seeds when it starts to pop
Step 2
Add the onions and turn the heat to medium, fry for 10 minutes or until golden, turning slightly brown
Step 3
Add half of the curry leaves, the garlic, dried spices and fry for a further 5 minutes. If it starts to catch add a few tbsp of water
Step 4
Add the tomato purée, diced tomatoes and turn the heat down. Cook on low for five minutes
Step 5
Add the other half of the curry leaves and the prawns, turn back to medium and cook covered until the prawns just turn opaque
Step 6
Scatter with coriander if desired
