Instructions
Step 1
Remove potato skin and boil in hot water until soft. Drain and mash
Step 2
Into a bowl stir the mash potato, flour, egg and Parmesan until a bowl is formed
Step 3
Working on a lightly floured surface, divide dough into 6 equal pieces. Roll each piece into long rope, sprinkling with additional flour as needed to prevent sticking. Using a sharp knife, cut the rope into small bite size pieces and baking sheet
Step 4
Bring a large pot of salted water to a boil; working in 3 batches, cook gnocchi until tender, stirring occasionally, about 4-6 minutes. Drain well and transfer to pan to grill on each side for a few minute until golden
Step 5
Leave the gnocchi aside to cool down and start with the sauce
Step 6
I’m a sauce pan mix chopped tomato, 30-50h low fat cream cheese, salt and pepper and bring to a boil. I added paprika for taste too.
Step 7
Sauve sauce is ready add spinach to coo for 3 minute
Step 8
Mix the cooked gnocchi with sauce. Serve with bresaola and parmesan at the top
