Instructions

Step 1
Boil a kettle
Step 2
Separate the white crab meat from the brown crab meat with a spoon (you’ll use the white meat at the end)
Step 3
Season the white meat with a pinch of salt and set aside
Step 4
Start cooking the spaghetti.
Step 5
Re-boil a kettle.
Step 6
Meanwhile, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat
Step 7
Once hot, add the brown crab meat and roasted garlic paste with half the chilli flakes and cook for 30 secs
Step 8
Add the soy sauce, toasted sesame oil with the juice of 1/2 lime and a generous pinch of sugar and cook for 30 secs further
Step 9
Reduce the heat to low – this is your crab sauce
Step 10
Add the sliced spring greens to a colander over the sink
Step 11
Drain the soaked noodles over the sliced spring greens, and then pour the second kettle of boiled water all over until bright green and wilted
Step 12
Add the pasta and spring greens to the crab sauce with the wilted greens.
Step 13
Give everything a good mix up until fully combined - these are your chilli crab noodles

Tip: Add a splash of the starchy noodle water if your sauce is looking a little dry

Cut the remaining lime into wedges

Snip the coriander roughly with scissors
Step 17
Set the chilli crab noodles on the table, ready to share

Top with the white crab meat

Garnish with the lime wedges, coriander and remaining chilli flakes (not a fan of spice? Just add a little) and let everyone dig in
