Instructions
Step 1
Combine the coconut milk and 1/2 cup of water in a medium pot and bring to a boil over high heat.



Step 2
Add the rice. Stir to combine, place the lid on the pot, and turn the heat down to the lowest setting possible.

Step 3
Allow the rice to cook 10 minutes on low, then turn the heat off completely.
Step 4
Let the rice sit, covered, 15 minutes more. (Don't peek inside!) In a small bowl, whisk together the vinegar and honey.
Step 5
Remove the lid, fluff the rice with a fork, and then stir in the vinegar mixture.
