Ingredients for Enchilada Sauce:
½ cuponion
minced
2cloves garlic
minced
15 ozcan tomato sauce
½ cupwater
1 Tbspchili powder
½ Tbspcumin
¼ tspsalt

Directions for Enchilada Sauce:
Step 1
Sauté onion and garlic in olive oil. Add the rest of the ingredients and simmer.
Directions for Casserole:
Step 2
Rinse and cook quinoa.
Step 3
Sauté onion and add sweet potatoes, cook until soft. Can add salt if desired.

Rinse black beans.
Step 5
Add cooked quinoa, onion & sweet potatoes, and black beans in a mixing bowl. Add enchilada sauce, parsley, and 1 cup cheese and stir until mixed evenly. Pour into a greased 9x13 pan. Cook for about 20 minutes (or until hot) @ 350 degrees. Add the remaining 1 cup cheese halfway through cooking time.
