Instructions

Step 1
Heat olive oil in a large cast iron skillet, sauté the onions and peppers over medium heat, with a pinch of salt, until they are soft and translucent, around 8 minutes. Increase the heat to medium high, and add the ground beef. Cook until the beef is fully cooked. Drain if necessary. Add the rice, and the can of tomatoes (juice too) to the beef and vegetables. Stir in the cheese. Add additional salt and pepper if needed. Serve and enjoy!
