Instructions
Step 1
In a pan, saute carrots, celery and onions with olive oil for 5 minutes or until onions turn translucent.
Step 2
Add garlic and mint and saute for 1 minute, then add in paprika and cayenne and saute for 2 minutes to release its oils.
Step 3
Add in crushed tomatoes and stir then add in veg stock and bring to a simmer for 30 minutes.
Step 4
Save 0.5L of the liquid and set aside. Place daikon into liquid and simmer for 10 minutes.
Step 5
Slice roma tomatoes and drizzle with olive oil and salt and pepper. Place onto a sheet pan and broil in an oven for 5 minutes at 500 degrees F.
Step 6
Place soup into a blender, and puree it. Now lets plate!
