Step 1
Heat up the oil in a wok or similar size heavy-based pan & add the garlic & the chopped leek. Sweat until the leek is translucent.
Step 2
Add the peas to the pan & cook for 3 minutes. Prepare the stock & add a good teaspoon of yeast extract, stir to melt both down. Add the liquid to the pan & season well with salt & pepper. Bring to the boil & simmer for 5 minutes, then take off the heat & blend the soup. You can do this by pouring the liquid into a blender jar & whizzing up adding a handful of spinach & watercress at a time. The warm liquid will cook the leaves as they mix. Once the liquid is blended, add a good squeeze of lemon juice, stir & pour into a warm bowl to serve.
