Ingredients

3 lbboneless skinless chicken thighs

1 Tbsoil
2yellow onions
large, quartered length-wise and thinly sliced crosswise
2garlic cloves

2 Tbsflour
2 Tbspaprika
1 tsphot paprika
or additional regular paprika
¼ tspcayenne pepper

1 x 14 ozcan crushed tomatoes
2 cupschicken broth
¾ cupsour cream
1 x 16 ozegg noodles
or bow tie pasta
Instructions
Step 1
Season the chicken with salt and pepper. In a very large, deep, heavy

saute pan over medium-high heat, heat the oil. When the oil is hot, add

the chicken and cook for 3-5 minutes. Flip the chicken and cook for

another 3-5 minutes; it will not be cooked through. Transfer the

chicken to a plate. It’s fine if there are bits stuck to the pan.

Return the pan to medium heat and add the onions. Saute for 5 minutes, or until softened and starting to brown. Stir in the garlic and

saute for one minute more. Stir in the flour and spices, stirring for 1 minute, or until well mixed. Add the crushed tomatoes and broth.

Bring to a simmer, stirring occasionally and scraping the bottom to

loosen any stuck bits.

Return the chicken to the pan, along with any juices on the plate. Bring

to a boil and then simmer on low for about 90 minutes, until the

chicken easily shreds apart with a fork. Meanwhile, bring a large pot of

water to a boil and cook the egg noodles according to package

directions.

Remove pan from heat and stir in sour cream. Serve over egg noodles.
