Ingredients
12 servings

24 ozfresh salmon fillet

1 cuponion
finely diced

1 cupcarrots
finely diced

1 cupcelery
finely diced

¼ cupfresh parsley
chopped

2 tspgarlic powder

2 Tbspdijon mustard

1 tspground black pepper

1 tspsalt

1 cuppanko bread crumbs

5eggs
lightly beaten

Step 1
Note: Always cook salmon on aluminum foil, it sticks to silpat!
Step 2
Preheat oven to 400 F and mist baking sheet with spray. Cook salmon fillets until an internal temp of 145F.
Step 3
Clean the rice. Add 6 cups water. Cook in rice cooker
Step 4
In a medium bowl, flake salmon. Add remaining ingredients and mix well.
Step 5
Using a 1/2 cup measuring cup pack salmon cakes in to form patty shape. Tap patty out and place on baking tray.
Step 6
Bake for 8-10 minutes on each side, until golden brown
Step 7
To make meals, put 1/2 cup of rice with a tablespoon of honey mustard and a patty in top, with 1/2 bag frozen vegetables.
