1yellow onion

5garlic cloves

50gginger
minced
2 Tbsptomato paste
2 Tbspspicy bean paste
2 Tbspmiso
5 cupswater
1 Tbspblack pepper
1 Tbspsugar
1 Tbspsoy sauce
more to taste
1 Tbspred chili flakes

Step 1
Add water into a sauce pan on medium high heat
Step 2
Add kombu sheets and bring to a boil then bring down to a simmer for 10 minutes
Step 3
After 10 minutes add shiitake mushrooms and garlic cloves and simmer for another 10 minutes

Turn off the heat and add bonito flakes. Let this soak for 10 minutes

Strain and set aside

In a large saucepan, add oil on medium high heat

Add onions, garlic, and ginger and saute until fragrant (1 minute)

Add tomato paste, bean paste, miso and saute for another minute

Add water and bring to boil then simmer for 15 minutes

Add the seasonings to the broth then simmer for another 15 minutes

Strain and keep warm

Combine soy sauce and mirin then marinate pork belly for at least 2 hours

Cook pork belly about 4 minutes on each side in a pan

Pan fry shiitake mushrooms in pork belly fat

Blanch bok choy in boiling water for 30 seconds

Slice green onions and red chili peppers

Boil tofu for 2 minutes
