Crispy Roasted Cabbage with Whipped Sweet Potato and Feta

Instructions

Step 1
Preheat the oven to 400. Line a sheet pan with parchment paper and set aside. Drizzle half of the oil evenly over the bottom of the sheet pan, followed by half of the dill, oregano, sumac salt and pepper. Place the cabbage wedges on top, then top them with the remaining oil and spices. Place the sheet pan in the oven for 30-35 minutes, tossing halfway. The cabbage will spread and break up into smaller pieces and get crispy.
Step 2
Add the garlic to a piece of aluminum foil, drizzle with oil and season with salt and pepper. Wrap the foil around the head of garlic and place in the oven with the cabbage. Roast for 30-35 minutes, until garlic is tender.
Step 3
When the cabbage and garlic are finished, turn off the oven and remove the garlic but leave the cabbage while you make the dip.
Step 4
Make the whipped sweet potato and feta. Add the sweet potato, feta cheese, roasted garlic, oil, yogurt, salt, cumin and paprika to a food processor and process until smooth.
Step 5
Spread the whipped feta on a plate, top it with the cabbage, parsley, sunflower seeds, feta, sumac, a drizzle of tahini and honey if using.
