Ingredients
4 servings
12 ouncespasta
bite-sized
3 tablespoonsolive oil
¼ cupwhite wine vinegar
1 teaspoondried dill
½ teaspoongarlic powder
¾ teaspoonkosher salt
black pepper
freshly ground, to taste
8basil leaves
large, minced
2 cupsgrape tomatoes
halved
1English cucumber
cut in fourths lengthwise and sliced
20kalamata olives
sliced in half
3 ouncesfeta cheese
crumbled, I use the reduced-fat version
Instructions
Step 1
1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain and rinse with cool water for a few seconds. Set aside.
Step 2
2. Meanwhile, in a large serving bowl, stir together olive oil, vinegar, dill, garlic powder, salt, and pepper. Add in basil, tomatoes, cucumber, and pasta, and stir gently to combine. Fold in feta cheese just before serving.
