Step 1
1. blend red pepper, scotch bonnet, garlic, ginger, red onion and plum tomatoes.
Step 2
2. fry together tomato puree and more chopped red onion for at least five minutes. add in the blended mixture, curry powder, thyme, chicken stock, bay leaves and salt. mix together and add the rice. boil everything together until the rice is cooked. don’t worry if the bottom burns.
Step 3
3. serve with fried plantain and red onions on top.
