Instructions

Step 1
Season meat. Seal and drop sealed meat in boiling water for 30 seconds to kill any lactobacillus. Then cook sous vide for 8-10 hours at 132°F.
Step 2
After cooking, chill in ice bath for 10 minutes to bring down external temp.
Step 3
Season meat. Take compound butter and rub all over exterior.
Step 4
Place on a rack in a pan in a 475°F oven for 15 minutes to sear.
