Ingredients
4 servings
1 poundboneless skinless chicken breasts
cut into 1-inch pieces
⅔ cupcorn starch
1 tablespoonvegetable oil
1red bell pepper
chopped
0.5white onion
chopped
2 cupspineapple
pieces
3cloves garlic
minced
2 teaspoonscrushed red pepper flakes
more or less depending on heat tolerance
⅔ cupgranulated sugar
1 cupwater
3 Tablespoonssweet red chili sauce
½ teaspoonsalt
4 tablespoonswater
cold
3 tablespoonscorn starch
Instructions
Step 1
Place cornstarch in a large bowl.
Step 2
Season the chicken pieces with salt and pepper. Place several chicken pieces into cornstarch and toss to coat before adding more. Repeat until all chicken pieces are in bowl and toss until all are well coated.
Step 3
Remove each chicken piece from bowl, shake off excess cornstarch and spread out on wire rack in half sheet pan. Allow to sit for 15 minutes.
Step 4
Heat the oil in a large non-stick skillet, over medium-high heat. Add coated chicken to skillet in batches (don't overcrowd pan). Cook and stir until thoroughly cooked through, browned and crispy; about 9 minutes. Remove chicken from skillet and place in a bowl. Tent with foil and set aside. Add more oil if needed between batches.
For the sauce
Step 5
In a large saucepan, combine garlic, red pepper flakes, sugar, water, sweet chili sauce and salt. Bring to a boil, whisking constantly.
Step 6
In a small bowl stir together the cold water and corn starch to make a slurry. When sauce comes to a boil, add the corn starch slurry to the sauce. Stir constantly until sauce thickens. Remove from heat and cover.
Step 7
In the same skillet you cooked chicken in (no need to clean) add the bell pepper, onion and pineapple. Cook over medium heat for a few minutes, or until onions start to soften. Add the sauce and chicken to this skillet. Cook and stir until chicken is reheated.
Step 8
Serve chicken with rice or noodles!
