Instructions
Step 1
Blend sun dried tomato, roasted red pepper, garlic, shallot, salt, and Calabrian chili in a blender to form a thick paste.
Step 2
Cut cauliflower down the root into thick planks or “steaks”
Step 3
Drizzle about 2 tablespoons of olive oil on a baking sheet and place in oven on high broil setting for about 5-8 minutes.
Step 4
Remove pan from oven and place cauliflower on pan. Spread red pepper paste on cauliflower until evenly coasted. Season with salt.
Step 5
Broil on high for about 10 minutes, checking on cauliflower to see browning. Stick a fork into the cauliflower to ensure it’s cooked through/tender before removing.
Step 6
Plate cauliflower steaks topped with feta, parsley, and lemon zest/juice to taste.
