Instructions
Step 1
Season salmon fillets with paprika, slat and pepper.
Step 2
Heat 1 tbsp olive oil in a large pan, add salmon and cook for 5-7 mins on both sides until cooked through. Remove and set aside.
Step 3
Add butter, heat until melted. Add garlic and cook for 1 min until softened.
Step 4
Add tomatoes, season and cook over low heat until starting to burst.
Step 5
Add spinach, season and cook until softened.
Step 6
Pour in cream and bring to a simmer, mix in parmesan, simmer for 1-2 mins.
Step 7
Add salmon back in and heat through.
Step 8
Sprinkle with basil and serve with rice, pasta or potatoes.
