Carb Reduced Eggplant Parmesan - with ground beef - 9 net carbs per serving
This is delicious and easy to make. Kind of like eggplant parmesan, kind of like lasagna, but no breading or noodles (or ricotta cheese).

Step 1
Cut up the eggplant, preheat oven to 350. Spray baking sheet with olive oil, sprinkle with salt, pepper, and garlic powder. Lay the slices on the tray, and then spray the tops of the slices with olive oil, and the same spices. Bake till spongy, not brown, about half an hour, maybe a bit longer. Let cool.

While the eggplant is baking, brown the ground beef, add garlic, oregano pepper flakes, pepper, and salt. When browned, add the marinara sauce, and simmer for about 15 minutes.
Step 3
Put about a cup of the meat sauce in the bottom of the pan, evenly. Lay out a layer of eggplant slices (half the eggplant) on top. Sprinkle with half a cup of the parmesan cheese.
Step 4
Add another layer of sauce. Then another layer of eggplant (the rest of the eggplant), then the other half cup of parmesan cheese.
Step 5
Top with the mozzarella cheese, and any remaining sauce (dab it on top).
Step 6
Bake, covered, at 350 for about 45 minutes. If desired, remove cover and bake for another 15 minutes. Let cool for about 5 minutes, and cut into 8 pieces. Use a serrated knife or it will mush up and not make nice serving pieces.
